Panera, Mirbeau, Clay Oven have critical restaurant inspection violations

Here are the food service inspections reported by the Onondaga County Health Department from Nov. 2 to 8:

UNSATISFACTORY INSPECTIONS

Clay Oven

8417 Oswego Road, Baldwinsville

Inspection started 2:09 p.m. Nov. 3

Reinspection is Required

Critical violations: Three bottles of liquor at bar were observed with dead fruit flies in bottles, products adulterated (corrected - bottles of liquor voluntarily discarded).

Spray bottle of blue chemical not labeled with contents (corrected - bottle labeled).

Foods at improper temperatures on lunch buffet. Chicken temped between 95 and 100 degrees and container of Tandoori chicken temped between 85 and 95 degrees. According to staff, these were both cooked one half hour prior (corrected - reheated to 165 degrees and returned to buffet).

Violations: Quart size containers of spices not labeled with the contents.

Single service take out containers used as scoops and stored in various products, lack handles and being reused.

Interiors of several sinks not clean, including hand wash sinks in server stations, and three-bay sink at bar.

Restrooms have strong offensive odor. One stall in men’s restroom out of order.

Comments: Establishment not following the guidelines of the waiver to use time as a public health control, time/temperature log not maintained.

Mirbeau Inn and Spa

851 West Genesee Street, Skaneateles, NY 13152

Inspection started 11:30 a.m. Nov. 4

Critical violations: Bare hand contact with ready-to-eat food observed. Line cook observed plating four slices of toast without gloves or other barrier (corrected - cook voluntarily discarded four slices of toast).

Violations: Some squeeze bottles of condiments stored at prep line and rear kitchen coolers not labeled.

Ice scoop for bar ice bin stored on top of drain mat on bar top (corrected - staff removed and washed scoop, stored in clean food storage bin behind bar).

Cutting boards at prep stations near grill area in poor repair; have deep gouges and significant staining.

Wire shelving racks inside outdoor walk-in produce cooler in poor repair with rust, not smooth and easily cleanable.

Hand wash sink at bar area lacks paper towels (corrected).

Comments: Education provided to staff regarding bare hand contact with ready-to-eat foods.

Facility presently using portable cutting boards on top of built-in boards at prep line. Per discussion with kitchen manager, facility is in process of obtaining replacement built-in boards.

Panera Bread

5663 East Circle Drive, Cicero, NY 13039

Inspection started 3:04 p.m. Nov. 7

Reinspection is Required

Critical violation: Several loaves of bread stored behind front counter observed with small black flies landing directly on the product, products adulterated (corrected - approximately 10 loaves of various types voluntarily discarded).

Violations: Various baked goods stored behind the front counter not stored protected from small black flies in the area.

Floor drains along front service area have small black flies inside grates.

Small black flies noted along main service line, at far ends. On right side behind the baked goods, and on far left side on a wall behind prep coolers.

Comments: According to management, pest control is aware of flies but has only put up a fly trap behind soda machine on far left side of store. The problem is centered in a different area than that and drains need to be treated. All food items should be kept covered until flies are gone.
